The ingredients are simple and the recipe looks user friendly. It has chocolate and peanut butter; what more could one ask for in a recipe?
At this busy time of the year, we can all use an easy-to-bake cake recipe that is tastier than the traditional fruit cake. I had to share this recipe with a friend when she told me that her family passed around the same fruit cake from year to year, because “nobody I know really eats that stuff!”
Ingredients:
Cake
1 box Devil’s Food Cake
¬Ω cup vegetable oil
1 ¼ cups water
4 large eggs
1 (3.9 oz.) package instant chocolate pudding and pie filling mix
2 cups (12 oz.) chocolate chips
Frosting
¬Ω cup whipped vanilla frosting
¬Ω cup creamy peanut butter
¼ tsp. almond extract
¬Ω cup milk
Chocolate curls or shavings for garnish (optional)
Directions:
Heat oven to 350°F. Spray a 12-cup fluted pan with flour no-stick cooking spray.
Combine cake mix, oil, water, eggs and pudding mix in a large bowl with an electric mixer at low speed until moistened. Beat 2 minutes at medium speed. Stir in chocolate chips. Pour batter into prepared pan.
Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pan 20 minutes. Invert onto serving plate. Cool completely.
Beat frosting, peanut butter, almond extract and milk in medium bowl with electric mixer until well combined. Spoon frosting over cooled cake. Garnish with chocolate shavings, if desired.
