Cheese Blintzes

This is a recipe my mother-in-law made for parties. When she passed it on to me, it instantly became a favorite among my family and friends, too. They are a bit time consuming to make, but if you enlist a good friend, turn up the stereo and make a stiff drink, I can guarantee you a good time in the kitchen. These can be prepared in advance and you can even freeze them to bake at a later date.
Ingredients:
One loaf of bread
2 small packages of cream cheese
1 small onion finely chopped
1 green pepper finely chopped
1 stick of butter

Directions:
Roll out the pieces of bread individually with a rolling pin and trim off the edges.
Mix the cream cheese, onions and green pepper together.
Spread the cream cheese mixture onto a slice of flattened bread.
Roll the bread from one direction, cut into three equal pieces.
Roll lightly in the melted butter and place on a cookie sheet.
Bake at 350 degrees until golden brown.
