My favorite Cool Cherry Pie recipe is packed full of vitamin A, vitamin C, and antioxidants. I thought I would share it with you.

Handful of Cherries
Cool Cherry Pie
Ingredients:
• 3 ounces cherry gelatin
• 2/3 cup boiling water
• 1 cup sugar
• 2 cups fresh cherries, pitted
• 2 cups fresh cherries, pitted
• 1 baked pie shell, 9 inch
Directions:
• Stir gelatin into boiling water in medium bowl until dissolved.
• Combine sugar and first amount of cherries in medium saucepan.
• Stir.
• Mash cherries then heat and stir until it boils.
• Cook for 2 minutes.
• Add gelatin mixture.
• Remove from heat.
• Place second amount of cherries in pie shell.
• Pour hot mixture over top, using just use what pie shell will hold. (A bit may need to be left out.)
• Chill at least 4 hours before cutting.
Note: Yes, you are using fresh cherries in the cherry gelatin.
Serve with whipped cream for finishing touch.

You saved the day Cyndi. Your sweet cherrie pie would not be full of vitamin C if it wasn't for the unboiled Cherries. Vitamin C is mostly destroyed due to heat application…
