Stuffed Jalapenos on the Grill

Fresh Peppers on the Grill
I have received so many compliments on the following recipe. This is a MUST-DO if you like hot and spicy! This recipe is a wonderful, fresh alternative to traditional Jalapeno Poppers that are breaded, stuffed with cream cheese or cheddar, and then deep fried.

Ingredients:
15 – 20 fresh jalapeno peppers
1 Cup shredded cheddar cheese
1 Pound ground sausage
1/2 Cup fresh, minced onions
1 Pound sliced bacon
15 to 20 “wooden” toothpicks

Grilled jalapeno peppersDirections:
Cut off the top of the pepper and clean out the core, seeds and veins.
Mix the cheese, sausage and onions in a bowl
Stuff each of the peppers with the sausage mixture
Cut your bacon slices in half
Wrap each pepper with a 1/2 slice of bacon.
Skewer each pepper with a toothpick to hold the bacon in place.
Place peppers upright in a grill-safe container. (We have a special jalapeno rack as pictured.)
Cook on your outdoor grill until the peppers start to wrinkle and the stuffing is bubbly, about 30 to 45 minutes.

If you need an alternative recipe… to either make more pepper servings, or (Heaven forbid) you don’t have an outdoor grill, here is another option:

Ingredients:
15 – 20 fresh jalapeno peppers
1 Cup shredded cheddar cheese
1 Pound ground sausage
1/2 Cup fresh, minced onions

Directions:
Preheat the oven to 350 degrees F.
Cut off the top of the pepper and clean out the core, seeds and veins.
Slice each jalapeno in half, lengthwise.
Mix the cheese, sausage and onions in a bowl
Put peppers, cut side up, on a cookie sheet lined with foil
Place a “glob” of the sausage and cheese mixture on each pepper half.
Cook in the oven for about 20 to 30 minutes until the peppers start to wrinkle and the stuffing is bubbly, about 30 to 45 minutes.

Sangria Recipe

Sangria, wine, cocktail, beverage, adult
Ingredients
1 oz. Triple Sec
1 tbs. Sugar
1 oz. Brandy
1 l. Club Soda
1 Fifth Red Wine
20 Slices Mixed Fruit
Mixing Instruction
Combine all alcohols, sugar and fruit. Refrigerate for 8 or more hours.
Add Club Soda, stir and serve.

My Vacuum Sucks!

Make your vacuum cleaner work for you. To really get into the hard to reach places, take the cardboard tube from an empty roll of paper towels and attach it to the end of your vacuum hose. You now have a vacuum that sucks no matter where you need it to reach!

Roasted Squash on the Grill

Fresh Grilled SquashIngredients:
4 yellow summer squash, cut lengthwise
4 zucchini, cut lengthwise
3 tablespoons olive oil
Sprinkles of Cajun blend spices
Preparation:
Combine olive oil and spices and brush onto squash.
Place vegetables on heated grill.
Let roast for 5-7 minutes.

Ingredients
2 shots Apricot Brandy
1 shot of Vodka
Fill glass with Orange Juice
Add a splash of Grenadine

Mixing Instructions
Shake well and decorate with a cherry and a slice of orange.

Long Island Iced Tea

1 Part Vodka
1 Part Rum
1 Part Triple Sec
1 1/2 Parts Sour Mix
1 Part Jose Cuervo Tequila
1 Part Gin
Splash of Pepsi or Coca Cola

Instructions
Mix ingredients together over ice in a glass.
Pour into shaker and give ONE brisk shake.
Pour back into glass and make sure there
is a touch of fizz at the top. Garnish with lemon.
