This recipe really does sound tasty!
1/2 lb ground beef
1 tsp salt
1/3 cup almond flour
3 cups baby spinach
1 tsp dijon mustard (optional)
2 Tbs tomato paste
2 Tbs sage
1 sweet potato, medium
Preheat oven to 350.
Place spinach in bowl and cover with boiling water for 2 minutes.
Drain, removing as much liquid as possible. Chop well.
Place spinach in bowl with beef, salt, almond flour, mustard, tomato paste and sage. Combine well.
Roll into 1-inch balls and place on an oven proof baking tray lined with baking paper.
Bake in the oven for 10-15 minutes, or until browned and cooked through.
Meanwhile, heat oil in a frying pan for deep frying.
Place a small handful of sweet potato ribbons in pan and fry for 2-3 minutes until slighly browned.
Remove from pan and drain on paper towels. Repeat with remaining sweet potato ribbons.
To serve, place ribbons on plate & top with meatballs.
