Here is a healthy recipe for Paleo style meatballs contributed by Club 14 Fitness. Paleo is a style of eating and meal preparation that is based on the foods our ancestors ate before bleached and enriched grains, processed foods and other conveniences of the industrial revolution that changed the American diet. (Think Caveman Diet!)

This recipe really does sound tasty!

Ingredients:

1/2 lb ground beef
1 tsp salt
1/3 cup almond flour
3 cups baby spinach
1 tsp dijon mustard (optional)
2 Tbs tomato paste
2 Tbs sage
1 sweet potato, medium
Olive oil

Directions:

Preheat oven to 350.

Place spinach in bowl and cover with boiling water for 2 minutes.

Drain, removing as much liquid as possible. Chop well.

Place spinach in bowl with beef, salt, almond flour, mustard, tomato paste and sage. Combine well.

Roll into 1-inch balls and place on an oven proof baking tray lined with baking paper.

Bake in the oven for 10-15 minutes, or until browned and cooked through.

Meanwhile, heat oil in a frying pan for deep frying.

Place a small handful of sweet potato ribbons in pan and fry for 2-3 minutes until slighly browned.

Remove from pan and drain on paper towels. Repeat with remaining sweet potato ribbons.

To serve, place ribbons on plate & top with meatballs.

    Where do you find almond flour? does our local health food store carry items like that? The recipe looks interesting. I have been keeping note of my diet and realizing that I need to make some changes. I currently use spaghetti squash as the “pasta” in many dishes so i like the idea of the sweet potato ribbons a lot.
