Pop's Pumpkin Pie

For those regular readers of SearchAmelia you may remember I lost my step-father, after a long illness, on Christmas Eve of last year. With the holidays approaching, I ran across his traditional recipe for Pop’s Pumpkin Pies.

Pop was proud of his pies that he would bake lovingly year after year and he knew they were absolutely my favorite dessert in the world! I found my step-father’s recipe for his incredible homemade pie this week and I thought I should share it with you!

Ingredients
3/4 Cup sugar
1/2 Teaspoon salt
1 Teaspoon Cinnamon
1/2 Teaspoon ginger
1/4 Teaspoon cloves
1 Teaspoon pumpkin pie spice
2 Eggs
2 Cups pumpkin
1 1/2 Cups condensed milk
1 Pie crust

Pop’s pumpkin was fresh. He would split the pumpkins in half, then baked them face down on a baking sheet in the oven until the pumpkin meat was soft. Sorry, but I didn’t find that part of the recipe.

Directions
Mix all ingredients, add eggs, pumpkin and sugar, then stir in the milk.
Pour into the pie crust.
Bake at 425 degrees for 15 minutes.
Reduce heat to 350 degrees and cook for an additional 40 minutes.
Cool overnight.
Top each slice with whipped cream.

Mom said it made Pop so happy when he saw how much we enjoyed his pies. By far, this is the best pumpkin pie that will ever cross your lips! Last year he cooked the pumpkins, but he didn’t feel strong enough to make the pies. Somehow he managed to put-up the fresh pumpkin in the deep-freeze, and this year we will be enjoying Pop’s homemade pies once again.

    Thanks Judie….. I used the fresh pumpkin last year, and I feel plenty validated after having done it once. But never again, too much work. 😉 I’ll stick with the canned from here on out!

    The recipe works with canned, too! I had to cook our pies longer than the additional 40 minutes listed above – it was more like 55 minutes in addition to the first 15 minutes. I waited until a knife inserted near the center came out clean. Happy Thanksgiving!
