So your home grown peppers have thrived this summer and you need a tasty dish to cook up these delicious bells. Here is a recipe for you. This one comes with compliments from the boys at one of our local fire stations‚ and wow, do they know how to cook!
Red or green bell peppers
1 Can Hot Rotel
1 Can Mexican Rotel
1 Can tomato sauce
-Cut peppers in half cleaning out the seeds.
-Rub with olive oil and season.
-Bake at 350 degrees to soften.
-Cut up smoked sausage in small chunks then saute.
-Prepare yellow rice.
-When the sausage is fully cooked, add to the rice.
-Add both cans of Rotel to rice and sausage and mix thoroughly.
-Stuff rice mixture in peppers and cover each with the tomato sauce.
-Continue baking at 350 degrees until pepper is soft.
-Add to the top of each pepper a slice of provolone cheese and continue baking till cheese is fully melted.
** 2 halves are usually more than enough for 1 person as you are sure to have extra rice mixture to place on the side.
