This is a great as a side dish or to stuff a chicken or turkey. It is absolutely wonderful mixed in rice with a leg of lamb, or pork roast.

6-8 cooking apples, peeled, cored & cut into chunks
1 onion, coarsely chopped
2 Tbsp butter
¬Ω cup chopped pecans
1 tsp minced garlic
1/2 tsp black pepper
1/2 tsp salt
2 tsp Italian Seasonings
3 Tbsp brown sugar
1/2 cup apple sauce or 1/4 cup apple juice
1 package Stuffing, prepared according to directions (Pepperidge Farms- recommended)
*optional- substitute apple juice or cider for 1/2 the liquid in stuffing

Melt butter in heavy skillet or pot. Add apples, onion, garlic, salt, pepper and Italian Seasonings. Cook on med low heat until apples & onions are fork tender. Add apple sauce & brown sugar, stirring carefully until brown sugar dissolves. Meanwhile, prepare stuffing according to package directions, substituting apple juice if desired. Combine apple mixture with stuffing, careful not to break up apples. Stuff turkey or chicken just prior to roasting, or transfer to baking dish and cover with foil. Bake 350 F. oven for 20 min. Remove foil bake 10-15 min longer until lightly crisp & browned.
