Here is a tasty recipe to use for all of that Kingfish or King Mackerel that you caught fresh or may have in the deep freezer!

The NSFA Tournament of Champion’s Kingfish Tournament is approaching fast and now you have to decide what to do with all of that delicious King Mackerel you have caught fishing the Atlantic Ocean off the coast of Amelia Island, Florida.

Here is a tasty treat that is easy to make and perfect to cook up fresh.

This recipe also works great if you have an ample supply of Fernandina Beach Kingfish in the deep freezer!


    1 pound of cubed king mackerel fillets
    1/2 cup creamy Italian-style salad dressing
    2 tablespoons olive oil
    1 diced onion
    1 diced bell pepper (any color is fine)
    1/4 cup flour
    1 16 ounce jar of salsa
    8 8 inch flour tortillas
    8 Ounces of shredded Cheddar cheese


    Marinate kingfish in the creamy Italian dressy for an hour.
    Preheat oven to 350 degrees Farenheidt
    Lightly oil a 9×13 inch baking dish
    In a non-stick frying pan, heat olive oil over medium heat.
    Sautee onions and green pepper until the onions are clear.
    Dredge fish cubes in flour.
    Stir in fish cubes and cook until fish is soft, about 5 minutes.
    Add one half of the salsa to the fish and vegetables, remove from heat.
    Spoon mixture into tortillas and roll them up.
    Place the rolled tortialla, seam side down in the baking dish.
    Spoon the remaining half of salsa over the enchiladas and sprinkle with shredded cheese.
    Bake in preheated oven for 15 minutes.
