Pineapple Casserole

This is a great side dish to serve with any dinner, especially pork dishes, but I like to serve it for Thanksgiving. This is a particular favorite dish served by our own Sliders restaurant in Fernandina Beach on Amelia Island

Ingredients:
3 tbsp. flour
3 tbsp. pineapple juice
1 (20 oz.) can pineapple chunks
1 c. crushed Ritz crackers (I like to use the Honey Butter variety)
1 stick melted butter
1 c. shredded cheddar cheese
1/2 c. sugar

Directions:
Mix all ingredients except crackers and butter in greased casserole dish. Mix crumbs and butter and sprinkle on top. Bake at 350 degrees for 20 to 30 minutes.

Furthermore I noticed we have other things in common such as Peter Gabriel and Wilbur Smith on our favorite lists, so we can't be all bad. Drop us a note on occasion or a link. Happy New Year and thanks for letting us use your picture.
