On Thursday, September 19 at The Ritz-Carlton, Amelia Island,  Salt Chef de Cuisine, Rick Laughlin  welcomes former Salt Chef Scott Crawford and Eric Hemer, Master Sommelier to a Summer Winemaker Dinner. “This four-course wine dinner closes our summer season with a rich selection of beef and vegetables from Hammock Hallow Farm, Ocala, Florida. The dinner is a final tribute to a superb summer season,” states Chef Laughlin who has led Salt to back-to-back AAA Five Diamond designations.

Chef Scott Crawford is Chef de Cuisine at Herons Five Star restaurant at the Umstead Inn in North Carolina. Crawford says, “I’m honored to return to the restaurant that gave me my start ten years ago.” To celebrate the occasion, Crawford will prepare Smoked Beef Belly that he refers to as a “refined barbecue experience.” The cooking preparation is elaborate with the beef cooked sous vide, hickory smoked, seared and dressed with a pine cone glaze.

Eric Hemer became the fourth person in the world earlier this year to be awarded both Master of Wine and Master Sommelier qualifications. He has selected rare wines from renowned European estates that are all rated 90 points plus by Wine Spectator. Eric is one of 77 people in the world that has earned the title Master of Wines and Master Sommelier. He will present a narrative on the various wines which can also be purchased after the event.

The evening begins at 6:00 p.m. with Champagne and Hors d’oeuvres Reception in the Salt Lounge followed by a 6:45 p.m. Dinner Seating. The menu will feature:
